Producing Edible Cups from Jack Fruit Peel: Waste to Taste ABSTRACT Food packaging is evolving as a result of the demand for eco-friendly substitutes for single-use plastic. The goal of this study is to create edible cups from Jackfruit (Artocarpus heterophyllus) peel, which is typically thrown away after jackfruit is processed. Reducing waste and promoting sustainable packaging are two advantages of using jackfruit peel, which is high in nutritional fibre and bioactive components. This study effectively converted jackfruifpeel into useful, edible cups with acceptable physical ancfsensory qualities by combining mechanical and thermal processing techniques. As a result, there is a creative way to lessen plastic waste in the food business while still producing biodegradable cups.

THE FIELD OF INVENTION
In the field of invention, packaging solutions that are edible and biodegradable are made by using agricultural waste, particularly jackfruit peel. This strategy lessens the environmental impact of typical throwaway products while supporting sustainable behaviours.
BACKGROUND OF THE INVENTION
Innovative applications for agricultural by-products are being investigated as a result of the difficulty in handling organic waste and the search for sustainable resources. Due to its size and high nutritional content, jackfruit produces a significant amount of peel waste when processed. Peels from jackfruit are usually thrown away, yet there is unrealised potential for use. Despite being a good source of nutrients and bioactive substances, peels are not often used in food items, suggesting there is potential for innovation. The peel of jackfruit is a prospective raw material for the production of edible items due to its high level of cellulose, hemicellulose, and lignin. The peels are first dried to lower the moisture level, and then they are ground to make jackfruit flour. The flavour and texture are then improved by combining this nutrient- and fiber-rich flour with sugar and cream. After the substance is well combined and baked into the desired cup form, eatable cups are produced, offering a sustainable substitute for traditional throwaway cups. Jackfruit peels have a considerable thermal stability below I5O°C, according to their physicochemical study, which qualifies them for processing and food product integration. Higher temperatures cause cellulose, hemicellulose, and lignin to break down, suggesting that the peels may tolerate a range of processing circumstances. In addition, jackfruit peels are an excellent source of bioactive substances like organic acids and phenolic antioxidants, which support the fruit's nutritional and medicinal qualities. This invention offers a sustainable substitute for singleuse plastic and paper cups in addition to addressing the issue of disposing of organic waste. This method adds value to an otherwise wasted material while promoting environmental sustainability and providing a creative solution to waste management issues by recycling jackfruit peels into delicious cups.
