Abstract
A process for obtaining potable coconut inflorescence sap obtained from an unopened spadix-type inflorescence. The sap oozing out of the spadix is collected in a portable chilled box that is detachably connected to the spadix. The collected sap is stored at a temperature of about -5oC to -10oC. The sap is then subject to blast freezing at a temperature of about -30oC to -50oC and subsequently stored in cold storage at a temperature of about -15oC to -25oC. The frozen sap is then thawed at a temperature of about 1oC to 4oC and stored at around 3oC. The thawed sap is then subjected to ultra-high temperature (UHT) treatment and cooled. The UHT-treated sap is packed in aseptic packets, cartons, or containers to make the sap ready for consumption at ambient temperature. FIG. 1
